We're counting down the days until we get to meet our little one... there are only a couple of weeks left until we get to see his sweet little face! I can't even begin to tell you how excited we are! Now that Stephen has gone back to school and I've finished working, it's really all I can think about! Luckily the baby's room is done, our bags are packed for the hospital and the house is clean... now we wait!

I'm almost to 30 weeks! Things have been going pretty well so far and I can't say I have much to complain about. Our baby boy is healthy, active and is growing perfectly, we couldn't ask for more! It's been fun to have strangers and people that come into work ask about the baby and how I'm doing. They're always surprised to hear that I feel great. I've had a few minor bumps in the road but for the most part I've been able to do everything that I was doing pre-pregnancy. As you can probably tell the posts have dwindled down to two per week, but right now between baby prep, work, vacations, and doctor visits, I don't have quite as much time to blog- and that's ok with me. I'm sure it will take me a while to get the hang of things and find some kind of balance once the baby comes, but if you'll just bare with me, I think you're going to like some of the recipes that I've got planned! Stay tuned!!!

Happy Mother's Day!
I've been trying to hold back for quite some time now, but I guess it's finally time to share our good news :) We're having a little boy this September!!!
I'm sure that those of you who are frequent readers probably thought something was up. I have been busy with work and other projects, but I've also been lacking a sweet tooth lately. Crazy, huh?!
This pregnancy has been really good to me so far- no morning sickness! That has been a huge blessing, especially because I work in a kitchen most of the time. I haven't had any weird cravings yet and I feel as good as I did before, just with a little person kicking, punching and tumbling in my tummy. It's been fun to feel him move- and yesterday Stephen felt his kicks for the first time, it was the perfect Mother's Day gift!
Anyway, I thought I'd share these homemade cream puffs with you today. They're easy to make and they look really elegant! I filled mine with homemade whipped cream and lightly dusted them with powdered sugar. I love how light they are- you could definitely eat a few of these in one sitting, and let me tell you, I did! I think they'd be great with a drizzle of chocolate on top or even filled with some lemon curd! Enjoy!
Homemade Cream Puffs
Pâte â choux:
1 c. all-purpose flour
1 tbsp. granulated sugar
8 tbsp. (1 stick) butter
4 eggs
1 c. water
¼ tsp. salt
1 egg, lightly beaten
Vanilla bean whipped cream:
¼ c. powdered sugar
2 c. heavy whipping cream
½ tsp. vanilla bean paste
pinch of salt
Powdered sugar, for dusting (optional)
DIRECTIONS:
1. Preheat oven to 400˚F. Line a baking sheet with parchment paper, set aside.
2. To make the pâte â choux, place a medium size saucepan over low heat. Add butter, sugar, water and salt, stirring frequently. Turn heat up to a low boil, remove from head and add in flour. Stir vigorously until the mixture forms a thick paste and no flour pockets remain. Place over medium heat and cook for 1-2 minutes stirring constantly to prevent burning (a thin film will form on the bottom of your pan, and that's ok).
3. Place the hot paste into the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed for 2 minutes until it becomes slightly cooler. Then add the eggs one at a time until incorporated. The mixture will look shiny and will stick to the sides of the bowl. Beat for an additional 2 minutes on medium. Scoop dough into a large piping bag fitted with a large tip (around a ½" in diameter). Pipe 1½"circles onto the prepared baking sheet (about ¾" in height), spacing each two inches apart to reduce the risk of them baking into each other. Gently brush a light layer of beaten egg over each, try not to allow any of the wash to drip onto the parchment (if this happens, just wipe it up so it doesn't make the cream puffs stick).
4. Place the pan in the oven and bake for 20 minutes. After 20 minutes, open the oven, rotate the pan and reduce the heat to 350˚F, bake for an additional 20 minutes. Reduce oven heat to 300˚F and bake for 20 minutes to allow the pastry shells to dry out. That makes a total of 60 minutes or 1 hour at three separate temperatures. Remove from oven and allow to cool for 30 minutes.
5. Meanwhile to make the whipped cream, in a chilled bowl of a stand mixer fitted with the whisk attachment, combine powdered sugar, heavy cream, vanilla bean paste and salt. Beat on medium-high until the cream becomes stiff, about 1-2 minutes. Place in the refrigerator to keep cold until needed.
6. When the pastry shells have cooled, slice the top off of each one. Place the chilled whipped cream into a large piping bag fitted with a large round tip, pipe and fill each bottom. Place the top on each one, then lightly dust with powdered sugar. Serve immediate or store in the refrigerator for 1 day.

It's been a while since I've done an update about the two of us. We're still alive... barely.
Stephen has been swamped with school and church callings and I've been working 24/7 and fighting off one thing after another. Currently it's a sinus infection that's been keeping me in bed and out of the kitchen. Sad, I know! Thankfully I was still able to attend the Build Your Blog Conference with my sister-in-law Emily. We had such a fun time meeting new people and learning some great tips for our blogs. The highlight of the conference (at least for me) was getting to meet Maria from Two Peas & Their Pod and Amanda from Kevin & Amanda- you can see our picture with them here. Anyway, I thought I'd share some snapshots of what we did during January and what we've been up to this February.
January started off with freezing temperatures and a lot of snow // It piled up in a matter of hours!

The tree in our front yard was perfectly flocked with fresh powder // Piles of snow at the grocery store
Stephen's friends from Florida came to visit/ski and James brought everyone t-shirts of himself :)

Last week we were extremely busy. On the 4th I was tired and didn't feel like making dinner so we headed to Cafe Rio. We didn't want to get a late start on our hike up Y mountain (where we watched the fireworks from) so we scarfed down our food. Boy was it good // We've really missed their sweet pork, and I've missed their giant salads!
On Thursday I headed to Rhode Island to be with family. Strangers love to make comments about how bright my luggage is and how it will never get mistaken for another suitcase. The bright pink isn't really me, but it's always nice to be able to spot your bag within a matter of seconds. // I wore my new LBD- $15 from Target, such a steal!
Blessed Sacrament Church where we attended Mass in honor of my uncle. // Eating dinner with family in the house that my dad lived in when he first came to the United States. It was my first time being in that house.
They only sell brown eggs where my family lives, kind of cool! // Pile of Biscoff cookies from all of my flights. I will definitely be using those in something! Maybe cookies, cupcakes, bars or cheesecake? Hmmm...
Have you ever seen a red mushroom? We spotted one on our walk around a mansion in Bristol, RI. // We came to the end of the road and it went straight into the water. There was a man fishing just off the shore and while his back was turned the seagulls were eating the fish he had caught. It was so funny!
There were butterflies on the ground at the Blithewold Mansion. // Sail boats from the America's Cup.
Lighthouse turned into private residence // Waterfire (night festival) on the river in downtown Providence.
All in all it was a long and tiring week. Hopefully this week will be a little more relaxing!

Our 4th of July

Yesterday, Stephen and I woke up early and headed to the Kiwanis pancake breakfast. On our way there we found a couple of cup murals (bottoms of spray painted cups shoved into a fence). Just outside of the breakfast was the landing field for the hot air balloons, we were just in time to see a couple of them land.
After breakfast the parade started. The streets were crowded but we found a little spot to watch.
We saw Stephanie from the nienie dialogues.
And of course Cosmo was there getting the crowd rilled up.
Later we decided to hike the Y. We weren't the only ones with that idea.
We sat up there and let the Beach Boys serenade us from below.
The view was absolutely incredible. You could see absolutely everything!
Then we watched the fireworks and the fire. They don't call it the Stadium of fire for nothing, people.
We had such a fun and tiring day. Hope you had a happy and safe 4th of July!
